I've seen chefs say that the real heat in chilli peppers is due to a) the seeds b) the membranes c) the skin How can chefs not know something that basic? All Heston does is apply a bit of logic to a simple discipline unlike the usual chefs who keep repeating baseless facts because they were too thick to get into real colleges.
