If you use bomb instead it is too similar to rock (fist with thumb out) and dynamite is too similar to scissors (scissors with fingers together) either could replace paper because they beat rock, but scissors cut the fuse to beat them. They are too easily cheated, this is the main reason to keep paper, each pose is different enough to be clear. Paper covers rock. If a match of rock, paper, scissors degenerates into a fist fight it might be an inappropriate application to begin with.
