That's not the pilot - trust me - they don't fly one handed. Cool footage though. (and he was sitting in the back of the F18)

I believe the one handed technique at the start is some sort of safety precaution. Something about ensuring that the pilot's hand is away from the throttle while they're subjected to the launch g-forces. Remember seeing somewhere that they'll only launch the aircraft when they see the pilot in that position.
