Japanese dough pounding

(0:44) Making mochi, a Japanese rice cake made from pounding glutinous rice into a paste. The pounding process is called 'mochitsuki' and requires two people who work well together in sync, one to wet and turn the paste, the other to pound the dickens out of it.

Obviously they were doing it that way for the show. I used to eat this stuff in Hawaii because I'm on a gluten-free diet and this is just rice. It is usually white so I don't know why it's green here. I do know it requires pounding the rice but I also believe there are machines that do this for large production shops.

Latest comment: Yes there are machines that do this.. however they are demonstrating the traditional method of making these rice cakes for the benefit of keeping their traditions and culture alive. Also its a different color because rice cakes can come in different flavors. Just because YOU have only eaten the white version doesn't mean its the only one that exists. How naive.
