I always thought the barrel would blow up, as the bullet could not push the water out of it fast enough.

The gas bubble ahead of the bullet means it can leave the barrel, but once it hits the water properly, it slows and stops...

It's a vacuum created by the rotation and speed of the bullet, not a gas bubble. The gas bubbles are the explosion of the gunpowder after being sucked into the vacuum.

I had read or heard that you don't have to be far under water to be safe from bullets. This bears it out. The bullet looks like it only made about 3 feet from the gun. Also, what looks like a gas bubble must be something else because it collapses and there are only a few small bubbles left.

mythbusters did this on tv, turns out the smaller the calibre weapon the further the bullet will travel through water, with bigger more powerful weapons the bullets just explode when the hit the water. The water just cant get out of the way fast enough so acts more and more like a solid the harder you try and hit it, smaller slower bullets go further in water.
