It has to be that loose so that it doesn't dry before it is used and because the bricks are bone dry, they absorb a lot of the water very fast. That is why the mason loads plenty of mortar on to each brick and hold it in position just long enough for the water to soak into the bricks each side and behind. Skilled work by any standard.

Wow, that's so impressive! I'm now going to have to research this technique of building a roof, as to me that is quite fascinating. Now that's what I call an artisan! :) I would barely be able to build a straight wall :/
