Every Kg that is put into orbit has a HUGE price tag. Literally millions are spent on making space cargo as absolutely light as possible. This rocket is no exception. Then add the cost of going beyond an Earth orbit. This rocket was not cheap. Of course you can say “that that money could have been used in a more humanitarian way”. It’s logical. BUT, to use that money to launch a mannequin in a sports car, looking like he is driving through Tuscany in summer... Well played, Sir.

For testing the rocket it's too risky to put anything of value in the rocket, but it needs weight to be tested properly. In the past concrete was used, and when Elon heard this he said lets put something more interesting in than concrete. The risk of it going wrong was still the same so wasn't worth putting in a satelite or anything worth hundreds of millions of dollars.

For the same reason you don't see stars on photos from the moon landing.

Camera exposures are set for the sunlight that illuminates the car and Earth, which are much brighter than the stars. It's the same reason you don't see stars at night when you are in a city - your eyes adjust to the surrounding city lights, which are much brighter than the stars, so the stars become too dim to be visible.
