Avogadro’s number tells us how many atoms there are in one mole of anything, and we can use that along with the molar mass of silicon oxide to estimate the number of atoms in a grain.

The number of stars is an estimate based on observations (mostly from Hubble), with a margin of error calculated.  

Both are estimates, but providing one is substantially bigger than the other, that's all that is needed for a comparison.

TLDR: Just because you don't know the science, doesn't mean to say the science isn't there.
